Purchasing knives is the first thing to to if you want to be a cook. Good knife must fit in the hand and feel comfortable. You have to choose between French and German steel. You could also buy Japanese knife, but they are quite expensive and easy to break. So, the difference between French and German steel is that German steel is harder and stays longer sharp. It's also harder to sharpen. French steel is softer and easier to sharpen. I prefer German Wüsthof shown in the picture.
The basic set is a chef's knife, about 20cm, a vegetable knife, about 5-7cm and a bread knife. If you eat fish a lot, then a filleting knife is good to own.

- The handle must fit in your hand and the knife must be balanced.
- Sharpen it every time you use it. Before, after, doesn't matter. It keeps the blade sharp.
